Vegetarian Stuffed Cabbage Leaves with Orange and Chilli

These light stuffed cabbage leaves make a colourful vegetarian starter or lunch, with blanched cabbage wrapped around a fresh filling of carrot, mushrooms, spring onions and orange.

The orange brings brightness to the earthy vegetables, while chilli adds a little warmth. Serve them chilled or at room temperature as a simple make-ahead dish.

  1. Remove the tough outer leaves from the cabbage and trim the stalk end. Carefully separate 12 of the best leaves.

  2. Bring a large pan of lightly salted water to the boil. Blanch the cabbage leaves for 1–2 minutes until flexible, then transfer them to cold water. Drain and pat dry.

  3. Grate the carrot, slice the mushrooms and spring onions, then peel and finely chop the orange. Mix them together in a bowl with the chopped chilli.

  4. Season the vegetable and orange filling with black pepper and a little salt, then taste and adjust the chilli if needed.

  5. Place a spoonful of filling near the base of each cabbage leaf. Fold in the sides and roll firmly into neat parcels.

  6. Arrange the stuffed cabbage leaves seam-side down and serve chilled or at room temperature.
