Thai Corn Fritters

These Thai corn fritters are crisp outside, tender inside, and packed with sweetcorn, herbs and chilli. They make a great starter or snack, especially served hot with sweet chilli sauce and a squeeze of lime.

Method

  1. In a large bowl, mix plain flour, rice flour, baking powder, salt and pepper.
  2. Add eggs, fish sauce and lime zest, whisking into a thick batter.
  3. Fold in sweetcorn, spring onions, coriander, chilli and garlic until evenly combined.
  4. Heat a thin layer of oil in a large hob frying pan over medium heat.
  5. Drop heaped tablespoons of batter into the pan, flattening lightly. Fry in batches for 2 to 3 minutes per side until golden and crisp.
  6. Transfer to a wire rack or paper-lined plate and keep warm while cooking the remaining fritters.
  7. Serve hot with sweet chilli sauce and lime wedges.

Ingredients

  • 2 tbsp Fresh coriander chopped
  • 3 Spring onions finely sliced
  • 1 tbsp Fish Sauce
  • 1 tsp Lime Zest finely grated
  • Sweet chilli sauce optional, to serve
  • 1 Garlic Clove finely grated
  • 1 tsp Baking powder
  • 300 g sweetcorn kernels fresh, tinned (drained) or thawed frozen
  • 2 Eggs lightly beaten
  • 80 g Plain Flour
  • lime wedges, to serve
  • for shallow frying Neutral Oil
  • 1 small red chilli finely chopped, optional
  • Black Pepper, to taste
  • 40 g Rice Flour for extra crispness
  • Salt, to taste

Notes

Rice flour helps the fritters crisp up beautifully, but plain flour alone also works.
Do not overcrowd the pan; batch frying keeps edges crisp.
For a milder version, reduce or skip the fresh chilli.
