Fried Cabbage with Bacon

This fried cabbage is a hearty, savoury side made with crisp bacon, softened onion and plenty of tender cabbage. A little paprika gives the pan juices a warm smoky note.

It is quick enough for a weeknight meal and works particularly well alongside roast meats, sausages or a simple baked potato.

  1. Heat a large frying pan or sauté pan over a medium heat. Add the chopped bacon and cook for 5–6 minutes, stirring occasionally, until golden and crisp.

  2. Lift the bacon onto a plate with a slotted spoon, leaving the rendered fat in the pan.

  3. Add the butter to the bacon fat, then add the sliced onion. Cook for 3–4 minutes until softened and translucent.

  4. Stir in the garlic and cook for 1 minute, taking care not to let it catch.

  5. Add the cabbage in batches, tossing each addition through the onion and bacon fat until it starts to wilt.

  6. Season with the paprika, red pepper flakes if using, black pepper and a little salt. Cook for 12–15 minutes, stirring occasionally, until the cabbage is tender with a few lightly browned edges.

  7. Return the crisp bacon to the pan and cook for a further 2 minutes. Taste, adjust the seasoning and serve hot.
