Thai Corn Fritters
Crispy Thai-style corn fritters with spring onion, chilli and lime — quick to fry and perfect for sharing.
These cauliflower bites are coated in seasoned panko, baked until crisp and finished with a creamy bang bang sauce.
Serve them as a starter, snack or vegetable side with spring onion, chilli and a squeeze of lime.
Heat the oven to 220°C, or 200°C fan, and line a large baking tray with baking paper.
Whisk the flour, plant milk, paprika, garlic granules and salt in a bowl to make a smooth coating. Put the panko in a second bowl.
Dip each cauliflower floret in the coating, then roll it in panko. Arrange the pieces on the tray with space between them and mist with cooking oil.
Bake for 20 minutes, turn the florets, mist again and bake for 10 minutes more until crisp and golden.
Stir the mayonnaise, sriracha, maple syrup and lime juice together. Toss or drizzle the sauce over the hot cauliflower and finish with spring onions and red chilli.
