Speedy Beef & Broccoli Stir-Fry
A fast Chinese-style beef and broccoli stir-fry with tender steak, crisp greens and a glossy soy-oyster sauce for a weeknight fakeaway.
This stir-fried beef is all about fast heat, savoury sauce and plenty of vegetables. Oyster mushrooms bring a meaty bite, spinach wilts into the pan in seconds, and a short cornflour marinade keeps the beef tender.
Have the rice ready before you start: once the wok is hot, the whole dish comes together quickly and is best eaten straight away.
Mix the sliced beef with 1 tablespoon soy sauce, 1 tablespoon oyster sauce, the cornflour and Shaoxing wine. Leave it to sit while you prepare the vegetables.
Heat a wok or large frying pan until very hot. Add 1 tablespoon vegetable oil, then stir-fry the beef for 1–2 minutes until browned at the edges. Lift it onto a plate.
Add the remaining oil to the pan. Stir-fry the oyster mushrooms for 3 minutes until browned and slightly softened.
Add the garlic and ginger, toss for 30 seconds, then return the beef to the pan with the remaining soy sauce and oyster sauce.
Add the spinach in handfuls and toss until just wilted. Finish with sesame oil and spring onions, then spoon over cooked rice.
