Speedy Beef & Broccoli Stir-Fry

This speedy beef and broccoli stir-fry is built for a hot pan and a short cooking time: thin slices of steak, tender-crisp broccoli and a savoury soy-oyster sauce that clings to every bite.

Have the sauce mixed and the vegetables ready before you start, then the whole dish comes together in minutes. Spoon it over rice for a practical weeknight dinner with proper takeaway-style flavour.

  1. Toss the sliced beef with the cornflour and 1 tablespoon of the soy sauce, then leave it to sit while you prepare the sauce and vegetables.

  2. Mix the remaining soy sauce with the oyster sauce, Shaoxing rice wine, beef stock and sesame oil in a jug.

  3. Heat a wok or large frying pan until very hot, add 1 tablespoon of vegetable oil and sear the beef for 60–90 seconds until browned at the edges. Lift it onto a plate.

  4. Add the remaining oil to the pan, then stir-fry the broccoli for 2 minutes. Add the garlic, ginger and most of the spring onions and cook for 30 seconds more.

  5. Pour in the sauce, let it bubble for 1–2 minutes, then return the beef to the pan and toss until everything is glossy and the broccoli is tender-crisp.

  6. Spoon the stir-fry over rice and finish with the remaining spring onions.
