This quick beef stir-fry is built for a busy evening: browned minced beef, tender-crisp broccoli and sweet onion are brought together with a light soy and cornflour sauce. Serve it over rice for a straightforward, satisfying dinner.

  1. Cook the rice according to the packet instructions so it is ready to serve.

  2. Mix the soy sauce, water and cornflour in a small bowl until smooth.

  3. Heat the vegetable oil in a large wok or frying pan over high heat. Add the minced beef and stir-fry for 5–6 minutes, breaking it up, until browned.

  4. Add the sliced onion and stir-fry for 2–3 minutes until softened but not coloured.

  5. Add the broccoli and stir-fry for 3–4 minutes until bright green and just tender, keeping some bite.

  6. Pour in the soy mixture and toss everything together for 1–2 minutes until the sauce thickens and coats the beef and vegetables.

  7. Season with salt and black pepper, then serve immediately with the cooked rice.
