Depression-Era Shipwreck Stew
A thrifty slow-cooker stew of beef, potatoes, onion, tomatoes and vegetable soup for a filling family dinner.
These classic American beef sliders are made with a thin seasoned beef layer, soft onions, melted cheese and tangy pickles tucked into small toasted rolls.
Baking the beef as one thin layer keeps the sliders quick and evenly sized, while a final brush of melted butter gives the rolls a golden finish. Serve them as a casual dinner, party food or game-day snack.
Heat the oven to 200°C fan. Line a shallow baking tray with baking paper.
Mix the beef mince with half the chopped onion, Worcestershire sauce, garlic powder, salt and black pepper. Press it into the lined tray in an even rectangle, roughly the size of the joined rolls.
Scatter the remaining onion over the beef and bake for 12–15 minutes, until the beef is cooked through and the onions are soft. Carefully drain away any excess fat.
Place the joined rolls beside the tray and use the base to check the beef layer fits. Cut the cooked beef into 12 portions, or leave it as one sheet for easier assembly.
Split the rolls through the middle, keeping the individual rolls joined. Arrange the beef over the bottom half, cover with the cheese and return to the oven for 2–3 minutes until melted.
Add the sliced gherkins, replace the tops and brush them with melted butter. Sprinkle with sesame seeds if using, then bake for 3–5 minutes until the rolls are warm and lightly golden.
Separate the sliders and serve hot with extra gherkins or ketchup on the side.
