This air fryer beef jerky uses lean beef steak, a soy and Worcestershire marinade, and a low air-fryer setting to make chewy, savoury strips without a dehydrator.

Slice the beef thinly, give it time to marinate, then dry it gently until it bends and cracks rather than feeling soft. Cool it fully before storing so the texture stays firm.

  1. Put the beef in the freezer for 20 minutes so it firms up, then slice it across the grain into thin, even strips about 3mm thick.

  2. Whisk the soy sauce, Worcestershire sauce, brown sugar, smoked paprika, garlic powder, onion powder, black pepper and salt in a bowl until the sugar dissolves.

  3. Add the beef strips, turn until well coated, cover and chill for at least 2 hours, or overnight for a deeper savoury flavour.

  4. Pat the strips dry with kitchen paper, then arrange them in a single layer in the air fryer basket or on a rack so air can circulate.

  5. Air fry or dehydrate at 70°C for 3 to 4 hours, turning the strips once or twice, until the beef is dry, darkened and bends before it cracks.

  6. Cool completely on a rack before serving or storing in an airtight container in the fridge.
