Stir-Fried Beef with Oyster Mushrooms and Spinach
Tender strips of beef are flash-fried with oyster mushrooms and spinach in a glossy soy-oyster sauce for a quick Chinese-style dinner.
Thin strips of beef are quickly marinated, seared in a hot pan, then tossed with peppers, onion, garlic, ginger and a savoury black bean sauce.
Keep everything chopped before you start cooking: the stir fry comes together quickly and is best served straight away with steamed rice or noodles.
Toss the sliced beef with the light soy sauce, cornflour and sesame oil. Leave it to marinate while you prepare the vegetables and sauce.
Mix the oyster sauce, dark soy sauce, stock or water and sugar in a small jug. Keep it beside the hob with the chopped black beans, garlic and ginger.
Heat a wok or large frying pan until very hot. Add half the vegetable oil, sear the beef in a single layer for 60–90 seconds, then lift it onto a plate.
Add the remaining oil to the pan. Stir-fry the onion and peppers for 2–3 minutes until bright and just starting to soften.
Add the black beans, garlic and ginger, stir for 30 seconds, then return the beef and any resting juices to the pan.
Pour in the sauce and toss everything together for 1–2 minutes until glossy and bubbling. Scatter with coriander if using and serve straight away with rice or noodles.
