Overnight Apple-Berry Oatmeal Parfait

This overnight apple-berry oatmeal parfait is a quick make-ahead breakfast with Greek yoghurt, oats, apple, blueberries and cinnamon.

Mix the base the night before, then stir through the fruit in the morning for a simple chilled breakfast.

  1. Mix the Greek yoghurt and rolled oats in a bowl or jar. Cover and chill overnight, or for at least 8 hours.
  2. When ready to eat, stir in the grated apple, blueberries and cinnamon. Sweeten to taste if liked, then serve chilled.

  • 150g Greek yoghurt
  • 40g Rolled Oats
  • 1/2 apple grated
  • 75g blueberries
  • 1/4 tsp ground cinnamon
  • low-calorie sweetener optional, to taste
