Ham & Pineapple Skewers with Teriyaki Glaze

These ham and pineapple skewers combine salty ham, sweet pineapple and red pepper with a glossy teriyaki-style glaze.

They are quick to cook on the barbecue or under a hot grill, making them useful for summer meals, parties or an easy family dinner.

  1. Preheat your grill to a medium-high heat or set your oven to 200°C if baking.
  2. Thread the ham chunks, pineapple pieces, and red bell pepper squares alternately onto skewers.
  3. Grill the skewers on the preheated grill, turning occasionally, until the ham is slightly charred and the vegetables are tender, about 10-15 minutes.
  4. Meanwhile, prepare the teriyaki glaze by simmering soy sauce, mirin, sugar, and a bit of garlic in a small saucepan over low heat until thickened.
  5. Baste the skewers with the teriyaki glaze during the last few minutes of grilling or baking.
  6. Serve the skewers hot, drizzled with additional teriyaki glaze if desired.

Ingredients

  • 500g cooked ham cut into chunks
  • 1 pineapple peeled, cored and cut into chunks
  • 1 Red Pepper cut into squares
  • 80ml soy sauce
  • 60ml mirin
  • 2 tbsp brown sugar
  • 1 garlic cloves crushed
  • 1 tsp sesame seeds optional, to serve
  • 2 Spring onions sliced, optional, to serve

Notes

For an extra touch of flavor, consider adding a sprinkle of sesame seeds or chopped spring onions before serving. These skewers can also be made with chicken or tofu as alternatives to ham for different dietary preferences.
