Barbecue Lamb Skewers with Blue Cheese Dressing

Marinated lamb is threaded onto skewers and cooked over high heat until lightly charred. Serve it with a sharp blue cheese dressing, smoky courgettes and crisp lettuce for a relaxed barbecue supper.

  1. Toss the lamb with 1 tablespoon of the olive oil, half the lemon zest and juice, the salt and black pepper. Leave to marinate for 30 minutes.

  2. Mix the blue cheese, soured cream, parsley and the remaining lemon juice into a spoonable dressing.

  3. Thread the lamb onto skewers. Heat a barbecue or grill until hot, then cook the skewers for 8–10 minutes, turning regularly, until browned and cooked through.

  4. Brush the courgettes with the remaining oil and grill for 3–4 minutes per side. Add the lettuce cut-side down for the final 1–2 minutes, until lightly charred.

  5. Rest the lamb for 3 minutes, then serve with the blue cheese dressing, grilled vegetables and any remaining parsley.
