These air fryer tortilla kebab skewers turn wraps and seasoned minced beef into a crisp, sliceable fakeaway-style dinner. The layers cook together so you get golden tortilla edges, juicy beef and little bursts of pepper and onion in every bite.

They are fun to serve straight from the board with a simple yoghurt dipping sauce, salad and chips, or tucked into extra wraps with shredded lettuce for an easy family meal.

  1. Soak 4 wooden skewers in water for 10 minutes if using wooden ones. Preheat the air fryer to 200°C.

  2. Mix the minced beef, diced pepper, onion, parsley, 1 tablespoon Greek yoghurt, 1 1/2 teaspoons paprika, salt and black pepper in a bowl until evenly combined.

  3. Cut the tortilla wraps into even squares, roughly 8–10cm across. Keep a few plain tortilla pieces aside for the ends of the skewers.

  4. Spread a thin layer of the beef mixture over a tortilla square, top with another tortilla square, then repeat to build a neat stack. Do not overfill or the middle will cook slowly.

  5. Cut the filled stack into 4 even rectangular portions, then carefully thread each portion onto a skewer so the layers sit tightly together. Finish each skewer with a plain tortilla piece to help hold it in place.

  6. Spray lightly with oil, place in the air fryer basket and cook at 200°C for 10–12 minutes, turning halfway, until the tortilla is golden and the beef is cooked through. Check the centre is piping hot before serving.

  7. For the dip, stir together the 150g Greek yoghurt, mayonnaise, ketchup and remaining 1/2 teaspoon paprika. Taste and season lightly if needed.

  8. Rest the skewers for 2 minutes, then serve with the yoghurt dipping sauce, salad, chips or extra wraps.
