Homemade Chicken Pathia from Scratch

Ingredients

  • 5ml Sugar
  • 3 cloves Garlic minced
  • 400g can Tomato Chopped
  • 5ml Turmeric
  • Chicken, to taste
  • Chicken, to taste
  • 1 Onion finely chopped large
  • Chicken, to taste
  • 30ml Vegetable Oil
  • Chicken, to taste
  • 1 Ginger grated
  • Chicken, to taste
  • Salt to taste, to taste
  • Coriander chopped for garnish fresh, to taste

Method

  1. Heat the oil in a large pan over medium heat. Add the onions, garlic, ginger, and green chili. Cook until the onions are golden and soft.
  2. Stir in the turmeric, chili powder, cumin, and coriander, cooking for a minute until fragrant.
  3. Add the chicken pieces to the pan, browning them slightly on all sides.
  4. Pour in the chopped tomatoes, tamarind paste, sugar, and a pinch of salt. Mix well and bring to a simmer.
  5. Reduce the heat, cover, and let the curry cook for about 25 minutes, or until the chicken is cooked through and the sauce has thickened.
  6. Adjust the seasoning if needed and garnish with chopped fresh coriander before serving.
  7. Serve hot with steamed basmati rice or warm naan bread.

Notes

For an added depth of flavour, you can also use a dash of garam masala towards the end of cooking.

Adjust the amount of green chilli and sugar to balance the heat and sweetness according to your taste.
