Lamb Rogan Josh
Slow-cooked lamb rogan josh with warming Kashmiri spices, yoghurt, and fresh coriander. A rich, comforting curry that’s ideal with basmati rice or naan.
Heat the oil in a large pan over medium heat.
Add the chopped onion and cook until it becomes translucent, about 5 minutes.
Add the minced garlic and grated ginger, and cook for another minute until fragrant.
Stir in the curry powder, turmeric, and ground cumin, and cook for 1-2 minutes to toast the spices.
Pour in the coconut milk and bring the mixture to a simmer.
Add the tinned tuna (drained and flaked) and cook for 5-7 minutes, allowing the flavours to meld together.
Season with salt and pepper to taste.
Stir in the chopped fresh coriander just before serving.
Serve the curry hot over steamed rice or with naan bread.
