Spicy Air Fryer Chicken Drumsticks

These spicy air fryer chicken drumsticks are a quick way to get crisp skin and tender meat without turning on the oven. A smoky paprika rub with garlic, oregano and a little cayenne gives bold flavour while keeping the prep simple.

They are ideal for a weeknight family meal and work well with salad, rice or flatbreads. Serve with lemon wedges to brighten the spice and balance the richness.

  1. Pat the chicken drumsticks dry with kitchen paper and place in a large bowl.
  2. Mix olive oil, smoked paprika, garlic powder, onion powder, cayenne, oregano, salt, black pepper and baking powder into a paste.
  3. Rub the seasoning all over the drumsticks until evenly coated, then leave for 10 minutes while the air fryer preheats.
  4. Preheat the air fryer to 200°C for 3 minutes.
  5. Arrange the drumsticks in a single layer in the basket with space between pieces; cook in batches if needed.
  6. Air fry for 22 to 25 minutes, turning halfway through, until the skin is crisp and the thickest part reaches 75°C.
  7. Rest for 3 minutes, then serve hot with lemon wedges and any pan juices spooned over.

Ingredients

  • 1/2 tsp cayenne pepper adjust to heat preference
  • 1/2 tsp Black Pepper freshly ground
  • 1 tbsp Olive Oil
  • 1 tsp Fine Sea Salt
  • 1 tsp Onion Powder
  • 1 Lemon cut into wedges to serve
  • 2 tsp Smoked Paprika
  • 1 tsp Dried oregano
  • 1 tsp Baking powder aluminium free
  • 8 chicken drumsticks skin on
  • 1 tsp Garlic Powder

Notes

Cook in batches rather than overcrowding the basket so the skin crisps properly.

Use a probe thermometer and pull the drumsticks once they hit 75°C in the thickest part.

For milder heat, reduce cayenne to a pinch and add more smoked paprika instead.
