Spicy Sausage & Macaroni

Spicy Sausage & Macaroni combines browned sausage, tender pasta and a lightly spiced tomato sauce.

It is a filling one-dish dinner that comes together quickly and reheats well for lunch the next day.

Method

  1. Cook macaroni in salted water until just tender, then drain and reserve a little cooking water.
  2. Heat oil in a large pan and brown sausage meat, breaking it into small pieces.
  3. Add onion and cook until soft, then stir in garlic for 1 minute.
  4. Mix in tomato purée, paprika and chilli flakes and cook briefly to bloom the spices.
  5. Add chopped tomatoes and simmer for 10 minutes until thick and glossy.
  6. Stir through cooked macaroni, adding a splash of pasta water if needed.
  7. Fold in most of the cheddar until melted into the sauce.
  8. Top with remaining cheddar and grill briefly or cover until the cheese melts.

Ingredients

  • 1/2 tsp Chilli Flakes
  • 2 cloves Garlic minced
  • 120 g Cheddar grated
  • 400 g Chopped tomatoes tin
  • 500 g Pork Sausages skins removed
  • 1 Onion diced
  • 300 g Macaroni
  • 1 tbsp Tomato purée
  • 1 tsp Smoked Paprika
  • 1 tbsp Olive Oil

Notes

Use sausages with a higher meat content for better texture and flavour.

A small splash of pasta water helps the sauce coat the macaroni evenly.
