BBQ Beef Super Noodle Stir-Fry

This BBQ Beef Super Noodle Stir-Fry is the ultimate answer to the 'what's for dinner?' question. It's packed with flavour, combining savoury beef and a sweet, smoky barbecue sauce with satisfying noodles and crisp vegetables. It's a fantastic way to get a balanced and exciting meal on the table without spending hours in the kitchen.

The recipe is incredibly versatile, making it a great option for using up whatever vegetables you have in the fridge. It comes together in under 30 minutes, making it perfect for busy weeknights when you crave something wholesome but don't have much time.

Ingredients

  • 400g Sirloin or Rump Steak thinly sliced
  • 2 Garlic Cloves finely chopped
  • 1 tbsp Vegetable Oil
  • 3 Spring onions sliced, to garnish
  • 6 tbsp BBQ Sauce
  • 2 tbsp Light Soy Sauce
  • 2 packets (approx. 180g total) Instant Ramen-Style Noodles flavour sachets discarded
  • 1 tbsp Sesame Oil
  • 1 tsp Sesame Seeds to garnish
  • 1 Red Onion sliced
  • 2 Bell Peppers (mixed colours) sliced

Method

  1. Cook the noodles according to packet instructions (without the flavour sachet). Drain well and toss with the sesame oil to prevent sticking. Set aside.
  2. Heat the vegetable oil in a large wok or frying pan over a high heat. Add the sliced beef and stir-fry for 2-3 minutes until just browned. Remove the beef from the wok and set aside.
  3. Add the sliced onion and bell peppers to the same wok, adding a little more oil if needed. Stir-fry for 4-5 minutes until they begin to soften but still have a slight crunch.
  4. Add the chopped garlic and cook for another minute until fragrant.
  5. Return the cooked beef to the wok along with the drained noodles. Pour over the BBQ sauce and soy sauce.
  6. Toss everything together vigorously for 1-2 minutes until the beef and noodles are heated through and everything is evenly coated in the sauce.
  7. Serve immediately, garnished with sliced spring onions and a sprinkle of sesame seeds.

Notes

For extra tender beef, try marinating the strips in a tablespoon of soy sauce and a teaspoon of cornflour for 15 minutes before cooking.
Feel free to swap the vegetables based on what you have. Mangetout, baby corn, or shredded cabbage all work wonderfully.
To make it spicier, add a pinch of chilli flakes or a dash of your favourite hot sauce along with the BBQ sauce.
