Classic Apple & Apricot Bread Pudding

  1. Heat oven to 180°C and butter a baking dish.
  2. Spread bread, apple and apricot in the dish.
  3. Whisk milk, cream, eggs, sugar, cinnamon and vanilla.
  4. Pour custard over bread and press down gently.
  5. Leave 15 minutes to soak.
  6. Bake 35–40 minutes until set and golden on top.
  7. Rest 5 minutes before serving.

  • 2 Apple peeled and diced
  • 20 g Butter for greasing
  • 150 ml Double cream
  • 1 tsp Cinnamon
  • 80 g Caster Sugar
  • 1 tsp Vanilla extract
  • 500 ml Milk
  • 8 slices White Bread stale, cubed
  • 120 g Dried Apricots chopped
  • 3 Egg large

Notes

Season to taste and adjust timings slightly depending on your hob/oven.
