Banana Bread with Cream Cheese Icing

Use very ripe bananas for a tender, warmly spiced loaf, then finish it with a smooth cream cheese icing. It is easy to slice for breakfast or afternoon tea.

  1. Heat the oven to 180°C (160°C fan). Grease and line a 900g loaf tin.

  2. Mash the three ripe bananas. Whisk the melted butter, brown sugar, eggs and vanilla into the banana.

  3. Sift in the flour, bicarbonate of soda and mixed spice, add the salt, and fold just until no dry flour remains.

  4. Spoon the batter into the tin and bake for 50–60 minutes, until risen and a skewer inserted in the centre comes out clean.

  5. Cool in the tin for 10 minutes, then transfer to a rack and cool completely.

  6. Beat the softened cream cheese and butter until smooth, then beat in the icing sugar. Spread over the cooled loaf and finish with sliced banana if serving straight away.
