This comforting banana sponge pudding bakes over ripe bananas and a layer of toffee sauce, creating a soft, golden sponge with a rich, sticky base.

Serve it warm with vanilla custard for an easy Sunday dessert or a cosy midweek treat.

  1. Heat the oven to 180C/160C fan/gas 4. Grease a 1.5-litre ovenproof dish with the vegetable oil and sit it on a baking tray.

  2. Spread the toffee sauce over the base of the dish, then arrange two sliced bananas over it. Mash the remaining banana.

  3. Beat the softened butter and caster sugar until pale and fluffy. Beat in the egg, then fold in the flour, baking powder, mixed spice and mashed banana.

  4. Spoon the sponge mixture over the bananas and smooth the surface. Bake for 28–30 minutes, until risen and golden and a skewer inserted into the sponge comes out clean.

  5. Rest the pudding for 5 minutes, then serve warm with vanilla custard.
