  1. Preheat your oven to 180°C/160°C Fan/ Gas 4. In a large bowl, combine the butter and sugar.

  2. In another bowl, mix the flour, almonds, cinnamon, and breadcrumbs together before adding this to the butter and sugar mixture. Combine these ingredients using your fingers until it forms a thick, crumbly dough.

  3. Place the coarsely grated apples in a 20cm/8in ovenproof dish. Top it off with the crumble mixture, spreading it evenly across the top, and bake it for 30 minutes or until it has turned brown.

  4. While the crumble is baking, start preparing the cardamom custard. Grind the cardamom seeds into a powder with a pestle and mortar. In a heavy-bottomed saucepan, combine the cream, cardamom, and vanilla extract, heating it over medium heat. Bring this mixture to boil before reducing the heat and letting it simmer for 3 minutes. Allow it to cool slightly before straining it into a bowl using a fine sieve.

  5. In another large bowl, whisk together the egg yolks, sugar and cornflour. Gradually pour in the warm cream mixture, whisking continuously. Pour this back into the saucepan and cook over a low heat for 6-8 minutes, or until the custard has thickened.

  6. Serve the warm apple crumble with a generous portion of the cardamom custard.
