Chicken with Mushrooms
Tender chicken and mushrooms in a glossy soy and stock sauce, ready in under half an hour.
These quick chicken flatbreads combine smoky, spicy chicken with a cooling chilli mayo and crunchy salad. They make an easy handheld dinner or relaxed lunch.
Mix the mayonnaise with the sriracha and lime juice, then set the chilli mayo aside.
Toss the chicken with the garlic, soy sauce and black pepper. Heat the oil in a large frying pan over a medium-high heat and stir-fry the chicken for 6–8 minutes, until cooked through and lightly browned.
Warm the flatbreads in a dry pan for 20–30 seconds per side. Fill each with shredded lettuce, cucumber and the hot chicken, then spoon over the chilli mayo.
Fold the flatbreads around the filling and serve straight away.
