Ftira is a rustic Maltese flatbread that makes an excellent no-cook lunch. This sandwich layers savoury tomato paste with tuna, briny olives and capers, then finishes with fresh tomato and crisp red onion.

Use a good chewy flatbread and let it rest for a few minutes before serving so the flavours settle without losing its texture.

  1. Split the flatbreads and lightly warm them in a dry pan or toaster if you prefer a softer crust, then cool for a minute.

  2. Spread the tomato paste over the cut sides, leaving a small border around the edge.

  3. Layer over the tuna, olives, capers, sliced onion and tomato. Drizzle with olive oil and season with salt and black pepper.

  4. Close the sandwiches, press gently, and leave for 5 minutes before cutting into wedges and serving.
