Beef Stir-Fry with Asparagus and Mangetout
Thinly sliced beef, crisp asparagus and mangetout tossed in a quick sake, soy and ginger glaze.
A fast, glossy bowl of chilli garlic noodles made with instant ramen, fresh chillies, soy, oyster sauce, lime and coriander. It is punchy, salty, sharp and properly satisfying — ideal when you want something better than plain packet noodles but still need dinner in ten minutes.
This version keeps the TikTok-style simplicity but improves the balance: the coriander goes in fresh at the end, the spring onion whites are fried for sweetness, and the lime cuts through the salty sauce.
Bring a pan of water to the boil and cook the ramen noodles until just tender. They should still have a little bite, as they will finish in the pan. Before draining, scoop out about 75ml of the noodle water.
Heat the neutral oil in a frying pan or wok over a medium heat. Add the garlic, bird's-eye chillies and the white parts of the spring onions. Fry for 30-45 seconds until fragrant, taking care not to let the garlic brown too much or it can taste bitter.
Turn the heat down slightly. Add the soy sauce, oyster sauce, chicken stock powder, sugar and reserved noodle water. Stir until the sauce loosens and starts to bubble.
Add the drained noodles to the pan and toss well for 1-2 minutes, until glossy and coated. Add a splash more water if the sauce gets too thick or salty.
Turn off the heat. Stir through the lime juice, spring onion greens and chopped coriander. Finish with a little sesame oil if using. Taste and adjust with more lime if needed.
