  5. Pour the peanut sauce over the noodles and vegetables. Toss everything together until well-coated.

  • 1 tbsp Rice Vinegar
  • 1/2 Cucumber julienned
  • 1/4 cup Roasted Peanuts chopped, for garnish
  • 2 cloves Garlic minced
  • 1-2 tsp Sriracha or to taste
  • 1/2 cup Creamy Peanut Butter
  • 1 large Carrot julienned or grated
  • 3 Green Onions thinly sliced
  • 1/4 cup Low-Sodium Soy Sauce
  • 1 tbsp Toasted Sesame Oil
  • 1/4 cup Hot Water to thin the sauce
  • 12 oz Noodles (e.g., Spaghetti or Udon)

Notes

Adjust the spice level by adding more or less sriracha. For a non-spicy version for kids, omit it entirely and serve it on the side for adults.
For extra protein, add shredded cooked chicken, grilled shrimp, or pan-fried tofu.
Feel free to use any long noodle you have on hand, such as spaghetti, linguine, soba, or ramen noodles.
