Byrek me Spinaq (Albanian Spinach Byrek)

Byrek me Spinaq combines flaky pastry with a savoury spinach and feta filling for one of Albania’s most loved bakes.

It is delicious hot or at room temperature, making it perfect for lunch, picnics, or make-ahead entertaining.

Ingredients

  • Salt, to taste
  • 4 tbsp Olive Oil plus extra for brushing
  • 1 Onion chopped
  • 1 pack Filo Pastry
  • 400 g Spinach
  • 200 g Feta Cheese crumbled
  • Black Pepper, to taste

Method

  1. Sauté onion and spinach in olive oil, then cool slightly.
  2. Mix in crumbled feta and season.
  3. Layer filo in an oiled tray, brushing each layer with oil.
  4. Add filling between layers and finish with filo on top.
  5. Bake at 180°C for 30–40 minutes until golden and crisp.
