The Ultimate Beef Wellington

The Ultimate Beef Wellington is a show-stopping roast for special occasions. Tender beef fillet is wrapped with mushroom duxelles and prosciutto, then encased in buttery pastry and baked to a perfect golden finish.

Rest before slicing and serve with rich gravy and seasonal vegetables.

Ingredients

  • 500 g Puff Pastry
  • Salt, to taste
  • 8 slices Prosciutto
  • 1 kg Beef Fillet centre-cut
  • 20 g Butter
  • 1 Egg beaten
  • 2 tbsp Dijon Mustard
  • 1 tbsp Olive Oil
  • Black Pepper, to taste
  • 500 g Chestnut Mushrooms finely chopped

Method

  1. Season and sear the beef in hot oil on all sides, then cool.
  2. Brush beef with Dijon mustard.
  3. Cook mushrooms in butter until dry and paste-like; cool fully.
  4. Lay prosciutto on cling film and spread mushroom duxelles over it.
  5. Wrap prosciutto layer around beef and chill 15 minutes.
  6. Roll pastry, wrap around beef and seal edges.
  7. Brush with egg wash and chill 20 minutes.
  8. Bake at 200°C for 35–40 minutes for medium-rare.
  9. Rest 15 minutes before slicing and serving.

Notes

Season to taste and adjust timings slightly depending on your hob/oven.
