French Ratatouille Tart
French Ratatouille Tart layers colourful Mediterranean vegetables over crisp pastry for a light savoury bake.
This savoury brunch bake layers buttery puff pastry with garlicky mushrooms and wilted spinach, then finishes in the oven with eggs and Parmesan.
Heat the oven to 200°C fan. Lightly grease a large baking tray and place the puff pastry on it.
Warm the oil in a frying pan over a medium heat. Cook the onion and mushrooms for 6–8 minutes until softened and any liquid has evaporated.
Stir in the garlic and spinach and cook for 1–2 minutes, until the spinach has wilted. Season with salt and black pepper.
Spoon the mushroom mixture over the pastry, leaving four small wells. Crack an egg into each well and scatter over the Parmesan.
Bake for 12–15 minutes, until the pastry is golden and the egg whites are set but the yolks remain slightly soft. Rest for 2 minutes before serving.
