Chicken Cordon Bleu is a comforting French-inspired main of flattened chicken wrapped around ham and Gruyere, breadcrumbed and baked until crisp. Serve it with green vegetables, salad or chips.

  1. Heat the oven to 200°C/180°C fan. Place each chicken breast between sheets of baking paper and gently flatten to an even thickness.

  2. Season the chicken, then lay a slice of ham and some Gruyere in the centre of each breast. Fold the chicken over the filling and press the edges firmly to seal.

  3. Set out the flour, beaten egg and breadcrumbs in three shallow dishes. Coat each stuffed breast in flour, then egg, then breadcrumbs, pressing the crumbs on well.

  4. Heat the oil in a large ovenproof frying pan over a medium-high heat. Brown the chicken for 2–3 minutes on each side until the coating is golden.

  5. Transfer the pan to the oven and bake for 15–18 minutes, until the chicken is cooked through and the cheese is melted. Rest for 5 minutes before serving.
