These beef burgers are topped with melting Camembert and sweet fried onion, then finished with Dijon mustard in toasted brioche buns.

Cook the patties until browned and cooked through, adding the cheese at the end so it softens without running away from the burger.

  1. Shape the beef mince into four even patties, keeping the edges neat, and season both sides with the salt and black pepper.

  2. Heat the olive oil in a large frying pan over a medium-high heat. Cook the sliced onion for 5–6 minutes until soft and golden, then stir in the garlic for 30 seconds. Transfer the onion to a plate.

  3. Cook the patties in the same pan for 4–5 minutes on each side, or until browned and cooked through. Spread the Dijon mustard over the cut sides of the toasted brioche buns.

  4. Place the Camembert wedges on the patties for the final 1–2 minutes and cover the pan briefly so the cheese softens. Fill the buns with the burgers and onion, then serve straight away.
