Air-fryer Gammon Steaks and Garlic Parmesan Fries

This air-fryer dinner brings together glazed gammon steaks and crisp, golden chips with very little fuss. The pineapple-mustard glaze gives the gammon a balanced sweet and savoury finish while keeping the meat juicy. The fries are finished with garlic butter and Parmesan for extra flavour and crunch. Serve as-is for a quick midweek plate, or add a fried egg and a spoonful of Hollandaise for a pub-style upgrade.

  1. Pat the gammon steaks dry. If there is a fat edge, make shallow cuts through the fat at 2cm intervals to stop curling.
  2. Mix the pineapple juice, brown sugar, and mustard in a bowl. Coat the gammon steaks in the glaze and set aside for 10 minutes.
  3. Preheat the air fryer to 180°C. Arrange the gammon in a single layer and cook for 10–12 minutes, turning halfway and brushing with any remaining glaze, until cooked through and lightly caramelised.
  4. While the gammon cooks, air-fry the frozen chips according to packet instructions, reducing the initial cook time by about 5 minutes.
  5. Mix melted butter, garlic, and Parmesan. Toss the partially cooked chips in this mixture, return them to the air fryer, and cook for the remaining time until crisp and golden.
  6. Optional: cook the eggs in a lightly oiled heatproof dish in the air fryer at 180°C for 3–5 minutes, or fry them in a pan.
  7. Serve the gammon with garlic Parmesan fries. Add an egg on top if using, then finish with warm Hollandaise and chopped chives.

Ingredients

  • 1 tbsp Brown sugar for glaze
  • 1 tbsp Chives finely chopped, to serve
  • 2 steaks (about 180–220g each) Gammon Steaks trim rind and score fat edges at 2cm intervals
  • 20g Parmesan finely grated
  • 2 tbsp Hollandaise sauce optional, warmed, to serve
  • 500g Frozen Oven Chips straight from freezer
  • 2 cloves Garlic finely minced
  • 2 Eggs optional, to serve
  • 3 tbsp Pineapple Juice for glaze
  • 30g Butter melted
  • 1 tsp Wholegrain Mustard for glaze

Notes

Use a digital thermometer if needed; gammon should be piping hot and fully cooked before serving.
If your air fryer basket is small, cook the gammon and fries in batches so the food browns instead of steaming.
Skip the Hollandaise for a lighter finish, or swap for a squeeze of lemon and black pepper.
