Air-Fried Chicken Bites with Sweet and Sour Sauce

These air-fried chicken bites give you the crunch of a takeaway favourite without a pan of oil. Panko-coated chicken cooks until golden and juicy, then gets folded through a bright sweet and sour sauce.

Pineapple juice, rice vinegar, ketchup and light soy make the sauce glossy, tangy and family-friendly. Serve with steamed rice, stir-fried greens or noodles for an easy fakeaway dinner.

  1. Preheat the air fryer to 190C. Pat the chicken dry so the coating sticks well.

  2. Put the flour on a plate and season it lightly. Beat the egg with the milk in a shallow bowl, then tip the panko breadcrumbs onto a second plate.

  3. Coat each chicken piece in flour, dip it into the egg mixture, then press it into the panko until evenly covered.

  4. Spray the air fryer basket with oil. Arrange the chicken in a single layer, spray the tops lightly and cook for 8–10 minutes, turning halfway, until golden and cooked through. Work in batches if needed.

  5. While the chicken cooks, put the pineapple juice, pineapple chunks, rice vinegar, ketchup, soy sauce and brown sugar in a small pan. Bring to a simmer and stir until the sugar dissolves.

  6. Stir in the cornflour paste and simmer for 1–2 minutes until the sauce turns glossy and coats the back of a spoon.

  7. Toss the hot chicken bites with enough sauce to coat them. Scatter with sliced spring onions and serve straight away with rice or noodles.
