Bacon-Wrapped Garlic Philly Chicken

Chicken breasts are filled with garlicky soft cheese, wrapped in streaky bacon and roasted until the outside is crisp and the centre is tender. Serve with green vegetables, salad or roast potatoes.

  1. Heat the oven to 200°C, or 180°C fan, and lightly oil a shallow roasting tin.

  2. Mix the soft cheese with the garlic, dried herbs and grated cheddar. Season lightly with black pepper.

  3. Cut a deep pocket along the side of each chicken breast without cutting through. Divide the cheese filling between the pockets and press the edges together.

  4. Rub the chicken with the olive oil and smoked paprika, then season with the salt and remaining pepper. Wrap each breast with three rashers of streaky bacon, overlapping them to cover the filling.

  5. Place the chicken in the tin and roast for 30–35 minutes, until the bacon is golden and the thickest part of the chicken reaches 75°C.

  6. Rest the chicken for 5 minutes, then serve with green vegetables, salad or roast potatoes, spooning over any juices from the tin.
