Easy Cheesy Savoury Pancakes
Quick savoury pancakes folded with cheese, herbs and parsley for an easy breakfast or brunch.
Make a reliable stack of light, fluffy pancakes with a softly set centre and golden edges. The batter comes together in one bowl, making this an easy breakfast for a weekend morning or Pancake Day.
Serve with berries, yoghurt, lemon and sugar, or your favourite syrup.
Tip the flour, baking powder, sugar and salt into a large bowl and whisk to combine.
Make a well in the centre, then whisk in the egg, milk and melted butter until you have a smooth batter; a few small lumps are fine.
Leave the batter to stand for 5 minutes while you heat a non-stick frying pan over a medium heat.
Brush the pan with a little butter. Add a small ladleful of batter and cook for 1–2 minutes, until bubbles appear and the underside is golden.
Flip the pancake and cook for 1 minute more. Repeat with the remaining batter, adding a little more butter to the pan as needed.
Keep the pancakes warm and serve with your chosen toppings.
