Slow Cooker Creamy Mexican Chicken
Tender shredded chicken in a smoky, creamy Mexican-style sauce with tomatoes, green chillies and coriander.
This easy apricot chicken uses three shortcut ingredients to make a glossy sweet-and-tangy sauce. The chicken cooks gently until tender while the preserves and dressing thicken around it.
Serve over rice, egg noodles or mashed potato so there is something to catch every spoonful of sauce.
Arrange the chicken breasts in a single layer in the slow cooker.
Whisk together the apricot preserves, dressing and onion soup mix until smooth.
Pour the sauce over the chicken, making sure each piece is coated.
Cover and cook on Low for 4–6 hours or High for 2–3 hours, until the chicken is fully cooked and tender.
Spoon the sauce over the chicken, then slice or shred it if preferred.
Serve hot over rice, noodles or mashed potato.
