Easy Cheesy Savoury Pancakes

These easy cheesy savoury pancakes are a quick twist on a breakfast classic, with a simple batter folded through with Cheddar, chives and parsley.

Serve them hot from the pan with a dollop of sour cream, extra herbs or a crisp salad for a light brunch.

Method

  1. Sift the flour into a large bowl and make a well in the centre. Crack in the eggs and whisk, gradually drawing in the flour.
  2. Slowly add the milk, whisking until smooth, then stir in a pinch of salt. Rest the batter for 10 minutes if you have time.
  3. Fold the grated Cheddar, chives and parsley into the batter.
  4. Heat a little butter in a frying pan over a medium heat. Add a ladleful of batter and tilt the pan to spread it out.
  5. Cook for 2–3 minutes on each side until golden, then repeat with the remaining batter, adding more butter as needed.

Ingredients

  • 125g Plain Flour
  • 2 Egg large
  • 250ml milk
  • 75g Cheddar Cheese grated
  • 1 tbsp Chives finely chopped
  • 1 tbsp Parsley chopped fresh
  • 25g butter for frying
  • 1 pinch salt

Notes

Feel free to experiment with different cheeses or herbs to suit your taste. These pancakes are also great with a dollop of sour cream on top!
