Basic Pancakes
Light, fluffy pancakes with crisp golden edges, ready in under 30 minutes.
These easy cheesy savoury pancakes are a quick twist on a breakfast classic, with a simple batter folded through with Cheddar, chives and parsley.
Serve them hot from the pan with a dollop of sour cream, extra herbs or a crisp salad for a light brunch.
Sift the flour into a large bowl and make a well in the centre. Crack in the eggs and whisk, gradually drawing in the flour.
Slowly add the milk, whisking until smooth, then stir in a pinch of salt. Rest the batter for 10 minutes if you have time.
Fold the grated Cheddar, chives and parsley into the batter.
Heat a little butter in a frying pan over a medium heat. Add a ladleful of batter and tilt the pan to spread it out.
Cook for 2–3 minutes on each side until golden, then repeat with the remaining batter, adding more butter as needed.
