Simple Zesty Guacamole

This quick guacamole is bright, creamy and full of fresh flavour, with lime and coriander lifting rich ripe avocado. It is deliberately simple, easy to tweak for heat, and perfect with tortilla chips, tacos, grilled meats or salad bowls.

  1. Scoop the avocado flesh into a bowl and mash roughly with a fork, leaving a little texture.
  2. Stir in lime juice, red onion, coriander and chilli (if using).
  3. Fold in diced tomatoes if using, then season with salt and black pepper.
  4. Taste and adjust with extra lime juice or salt as needed.
  5. Serve immediately, or press cling film directly onto the surface and chill briefly before serving.

Ingredients

  • 3 ripe avocados halved, stoned and scooped
  • 1 small jalapeno or green chilli finely chopped (optional)
  • Black Pepper, to taste
  • 1 Lime juiced, plus extra to taste
  • 1/4 Red Onion very finely diced
  • 6 Cherry Tomatoes finely diced, optional
  • 2 tbsp Fresh coriander finely chopped
  • 1/2 tsp Sea Salt to taste

Notes

Use ripe avocados that give slightly when pressed for best texture and flavour.
Keep it chunky for scoopable dip texture, or mash further for a smoother finish.
To reduce browning, press cling film directly on the surface before chilling.
