Fiery Eggs in Purgatory Supper Skillet
Runny eggs poached in a spicy tomato-garlic sauce for a bold one-pan supper in under 30 minutes.
This savoury meatball potato bake is a comforting family meal that combines golden meatballs, soft layered potatoes, and a deeply flavoured tomato sauce in one dish.
Everything bakes together until bubbling and rich, making it perfect for cosy dinners and easy leftovers the next day.
Heat oven to 190°C (170°C fan).
Mix minced beef with breadcrumbs, egg, half the garlic, salt, and pepper. Shape into small meatballs.
Brown meatballs in a little olive oil until lightly coloured, then set aside.
In the same pan, cook onion and remaining garlic until softened.
Stir in tomato purée, chopped tomatoes, stock, and oregano. Simmer 8–10 minutes.
Layer sliced potatoes in a greased baking dish, seasoning lightly between layers.
Add browned meatballs over the potatoes and pour over the tomato sauce.
Cover and bake for 35 minutes, then uncover, top with mozzarella (and parmesan if using), and bake 15–20 minutes more until potatoes are tender and top is golden.
Rest 5 minutes, garnish with parsley, and serve.
