Fiery Eggs in Purgatory Supper Skillet

This Fiery Eggs in Purgatory Supper Skillet delivers big flavour with very little effort. The chilli tomato base is rich, garlicky and perfect for dipping toast.

It is a brilliant weeknight supper when you want something hot, satisfying and cooked in one pan.

Method

  1. Heat olive oil in a wide pan and cook onion for 4 to 5 minutes until soft.
  2. Add garlic and chilli flakes and cook for 30 seconds.
  3. Stir in tomatoes and tomato purée, season, and simmer 10 minutes until thickened.
  4. Make four wells and crack in the eggs. Cover and cook 4 to 6 minutes until whites are set.
  5. Finish with parsley and black pepper and serve immediately with toast.

Ingredients

  • 4 Eggs
  • 1 tbsp Olive Oil
  • Salt, to taste
  • Black Pepper, to taste
  • 2 cloves Garlic minced
  • 400 g Tinned chopped tomatoes
  • 1 tsp Chilli Flakes or to taste
  • 1 tbsp Tomato purée
  • small handful Parsley chopped
  • 1 small Onions finely chopped

Notes

Use medium heat once eggs go in so whites set gently while yolks stay soft.

Add torn bread or toasted sourdough to make it a full supper plate.
