Method

- Heat olive oil in a wide pan and cook onion for 4 to 5 minutes until soft.
- Add garlic and chilli flakes and cook for 30 seconds.
- Stir in tomatoes and tomato purée, season, and simmer 10 minutes until thickened.
- Make four wells and crack in the eggs. Cover and cook 4 to 6 minutes until whites are set.
- Finish with parsley and black pepper and serve immediately with toast.

- 4 Eggs
- 1 tbsp Olive Oil
- Salt, to taste
- Black Pepper, to taste
- 2 cloves Garlic minced
- 400 g Tinned chopped tomatoes
- 1 tsp Chilli Flakes or to taste
- 1 tbsp Tomato purée
- small handful Parsley chopped
- 1 small Onions finely chopped
Notes
Use medium heat once eggs go in so whites set gently while yolks stay soft.
Add torn bread or toasted sourdough to make it a full supper plate.
