Polish Sausage Tomato Stew

This Polish sausage tomato stew is rustic, warming, and full of deep savoury flavour. Smoked sausage simmers with onion, peppers, and tomatoes to create a rich, comforting one-pot meal.

Serve with crusty bread, mashed potatoes, or buttered rice for a satisfying dinner that is easy to make and even better the next day.

Ingredients

  • 1/2 tsp Caraway seeds optional
  • 3 cloves Garlic minced
  • 250 ml Chicken Stock or vegetable stock
  • 1 tbsp Tomato purée
  • Salt, to taste
  • 1 tbsp Parsley chopped, to finish
  • 1 tbsp Olive Oil
  • 450 g Polish Sausage kielbasa, sliced
  • 1 Red Bell Pepper sliced
  • 400 g Chopped tomatoes canned
  • 1 tsp Smoked Paprika
  • Black Pepper, to taste
  • 1 large Onion finely chopped

Method

  1. Heat olive oil in a large pan and brown sliced sausage for 3–4 minutes.
  2. Add onion and pepper; cook until softened.
  3. Stir in garlic, smoked paprika, and caraway seeds (if using); cook 30 seconds.
  4. Add tomato purée and chopped tomatoes, then pour in stock.
  5. Simmer uncovered for 20–25 minutes until sauce thickens and flavours deepen.
  6. Season with salt and black pepper to taste.
  7. Finish with parsley and serve hot.

Notes

Use smoked Polish sausage (kielbasa) for the most authentic flavour.

Simmer gently so the sauce reduces and coats the sausage nicely.

Add chilli flakes if you want a spicier finish.
