Mediterranean Tagliatelle Delight

Mediterranean Tagliatelle Delight is a colourful pasta dish with tomatoes, olives, garlic and fresh herbs. It is bright, savoury and quick enough for weeknights.

Serve with extra parmesan and a crisp salad.

Method

  1. Cook tagliatelle until al dente and reserve a little pasta water.
  2. Heat olive oil and sauté courgette and pepper for 4–5 minutes.
  3. Add garlic and tomatoes and cook until softened.
  4. Stir in olives and season.
  5. Add drained pasta and toss, loosening with pasta water if needed.
  6. Finish with parmesan and basil, then serve.

Ingredients

  • 2 cloves Garlic minced
  • 80 g Black Olives sliced
  • 50 g Parmesan grated
  • 2 tbsp Olive Oil
  • Salt, to taste
  • 1 Red Pepper sliced
  • small handful Basil torn
  • 1 Courgette diced
  • 320 g Tagliatelle
  • 250 g Cherry Tomatoes halved

Notes

Season to taste and adjust timings slightly depending on your hob/oven.
