Ingredients

  • 3 Garlic Cloves minced
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 400 g tin Chopped tomatoes
  • 0.5 tsp Ground Cinnamon
  • 250 ml Chicken Stock
  • 1 Onion sliced
  • 100 g Dried Apricots halved
  • 800 g Chicken Thighs boneless

Method

  1. Brown the chicken in a casserole with a little oil, then remove to a plate.
  2. Cook onion until soft, add garlic and spices, and fry for 1 minute until fragrant.
  3. Add tomatoes, stock and apricots, then return the chicken to the pan.
  4. Cover and simmer gently for 35–40 minutes until the chicken is tender.
  5. Finish with chopped coriander and serve with couscous or rice.
