Ingredients
- 3 Garlic Cloves minced
- 1 tsp Ground cumin

- 400 g tin Chopped tomatoes
- 0.5 tsp Ground Cinnamon
- 250 ml Chicken Stock
- 1 Onion sliced
- 100 g Dried Apricots halved
- 800 g Chicken Thighs boneless

- Brown the chicken in a casserole with a little oil, then remove to a plate.
- Cook onion until soft, add garlic and spices, and fry for 1 minute until fragrant.
- Add tomatoes, stock and apricots, then return the chicken to the pan.
- Cover and simmer gently for 35–40 minutes until the chicken is tender.
- Finish with chopped coriander and serve with couscous or rice.
