Breakfast Royale Pizza

Breakfast Royale Pizza is a fun, hearty way to bring all your breakfast favourites together on one crisp base. It layers savoury sausage, smoky bacon, melty cheese, and perfectly cooked eggs for a proper weekend treat.

Great for sharing at brunch or lazy mornings, it is quick to customise with mushrooms, peppers, or chilli for extra flavour.

  1. Heat oven to 240°C (220°C fan) with a tray or pizza stone inside.
  2. Roll dough to your preferred thickness and brush edge lightly with olive oil.
  3. Spread tomato sauce over the base, then sprinkle mozzarella and cheddar.
  4. Add cooked bacon and crumbled sausage evenly across the pizza.
  5. Bake for 8–10 minutes until cheese is melting and base is starting to crisp.
  6. Remove briefly, crack eggs onto the pizza, and season with black pepper.
  7. Return to oven for 4–6 minutes until egg whites are set and yolks still soft (or longer if preferred).
  8. Finish with spring onion and serve immediately.

Ingredients

  • 3 Eggs
  • 60 g Cheddar Cheese grated, optional
  • 2 Sausage cooked and crumbled
  • 1 Spring Onion sliced, optional garnish
  • 180 g Mozzarella grated
  • 1 tbsp Olive Oil
  • 1 large ball Pizza dough or 2 small bases
  • Black Pepper, to taste
  • 120 ml Tomato Sauce pizza or passata base
  • 6 rashers Bacon cooked and chopped

Notes

Part-bake the base before adding eggs so the crust stays crisp.

Crack eggs on in the final bake window to avoid overcooking yolks.

Add fresh chives or spring onion at the end for brightness.
