Chicken Cordon Bleu
Crisp, golden chicken breasts filled with ham and melted Gruyere, finished in the oven for a reliable family dinner.
Chicken breasts are slit and filled with Camembert, garlic and thyme before baking until the cheese is soft and the chicken is cooked through.
Serve with green vegetables, roasted potatoes or a crisp salad to catch the creamy cheese as it melts.
Heat the oven to 200°C, or 180°C fan, and line a baking tray.
Cut a deep pocket into the side of each chicken breast without slicing all the way through. Fill each pocket with Camembert, then press in the garlic and thyme.
Rub the chicken with olive oil, salt and black pepper. Place it on the tray with the sealed side facing upwards.
Bake for 25–30 minutes, until the chicken is cooked through and the cheese is melted. Rest for 5 minutes before serving.
