Trileçe (Albanian Milk Cake)

Trileçe is a beloved Balkan-style milk cake with Albanian roots: airy sponge, rich milk soak, and a glossy caramel top.

The texture is light yet indulgent, making it ideal for celebrations or make-ahead desserts. Chill well before slicing for clean, neat portions.

Method

  1. Beat eggs and sugar until very pale and doubled in volume.
  2. Fold in flour and vanilla, then bake at 170°C for about 25 minutes.
  3. Mix milk, evaporated milk, condensed milk and salt.
  4. Poke holes in warm sponge and slowly pour over milk mixture.
  5. Chill 3–4 hours.
  6. Make caramel with sugar and water; spread thinly on top and chill before slicing.

  • 300 g Sugar divided
  • 6 Eggs
  • 200 ml Condensed Milk
  • 1 pinch Salt
  • 1 tsp Vanilla
  • 200 ml Evaporated Milk or double cream
  • 150 g Plain Flour
  • 80 ml Water for caramel
  • 400 ml Milk
