Banana Tarte Tatin with Chocolate Custard
Caramelised bananas and crisp puff pastry served with a smooth chocolate custard.
Sweet nectarines and blueberries bake into a jammy filling beneath a golden shortcrust pastry crust. Serve this easy French-style dessert warm, with vanilla ice cream if you like.
Heat the oven to 200°C fan 180°C and line a large baking tray with baking paper.
Toss the sliced nectarines and blueberries with the lemon zest, lemon juice, caster sugar and cornflour until the fruit is evenly coated.
Lay the pastry on the tray and spoon the fruit into the centre, leaving a 6cm border around the edge.
Fold the pastry border up and over the fruit, pleating it as you go. Brush the pastry with the beaten egg mixed with the cold water, then sprinkle with a little extra sugar.
Chill the shaped galette for 15 minutes, then bake for 35 minutes until the pastry is deep golden and the fruit is bubbling.
Leave to cool for 10 minutes before slicing. Serve warm with vanilla ice cream, if using.
