Speedy Beef & Broccoli Stir-Fry
A fast Chinese-style beef and broccoli stir-fry with tender steak, crisp greens and a glossy soy-oyster sauce for a weeknight fakeaway.
This quick beef and broccoli stir-fry makes a satisfying weeknight dinner. Thinly sliced beef is seared, then tossed with bright broccoli in a savoury gravy made with beef stock, soy and oyster sauce.
Serve it with steamed rice or noodles, spooning over plenty of the glossy sauce.
Mix the beef with 1 tablespoon of the soy sauce, the garlic and 1 teaspoon of the cornflour. Leave for 10 minutes while you prepare the remaining ingredients.
Heat the vegetable oil in a large frying pan or wok over high heat. Stir-fry the beef in a single layer for 2–3 minutes until browned but not quite cooked through, then transfer to a plate.
Add the broccoli to the hot pan with 2 tablespoons of water. Cover and steam for 2 minutes, then uncover and cook until bright green and just tender.
Whisk the beef stock with the remaining soy sauce, oyster sauce and the remaining cornflour. Pour it into the pan and bring to a simmer.
Return the beef and any resting juices to the pan. Toss for 1–2 minutes until the beef is cooked and the gravy is thick, glossy and coats everything.
Taste and season with salt and black pepper. Scatter over the spring onions and serve immediately with steamed rice or noodles.
