This apple and sultana filo roll gives you the cosy filling of an apple pudding with the light, flaky crunch of filo pastry. The fruit is briefly cooked with brown sugar, cinnamon and lemon so it rolls neatly and bakes without making the pastry soggy.

Serve warm slices with cream, custard or vanilla ice cream. It is simple enough for Sunday lunch but smart enough for a dinner-party pudding.

  1. Heat oven to 190°C (170°C fan) and line a tray with baking paper.

  2. In a pan, combine apples, sultanas, brown sugar, cinnamon, and lemon juice.

  3. Cook over medium heat for 8–10 minutes until apples soften and the mixture thickens slightly.

  4. Remove from heat and cool the filling fully.

  5. Lay one filo sheet on a clean surface and brush with melted butter. Repeat to layer all sheets.

  6. Spoon filling along one long side, leaving a border at the edges.

  7. Fold in sides and roll tightly into a long log.

  8. Place seam-side down on tray, brush with extra butter, and bake for 25–30 minutes until deep golden.

  9. Cool slightly, dust with icing sugar if using, slice, and serve.
